Day 1 — Arrival and first знакомства with the Old Town

  • ✈️ From Nuremberg Airport (NUE), take the U2 to Nürnberg Hbf (~13 min), then a regional train (RE/RB) to Bamberg (~35–45 min). Total travel time with the transfer is about 1–1.25 hours. Leave your things at the hotel and go for a gentle walk: from Obere Brücke with its tiny chapel and views of the town hall, along the Leinritt riverside promenade to “Little Venice.” In the evening—your first encounter with smoked beer: drop into Schlenkerla (Dominikanerstraße 6) and start with Märzen Rauchbier from the cask. Drink slowly; let the aroma of beechwood smoke “tune” your palate—after the second glass, the profile softens. Plan 2–3 hours for an unhurried dinner and getting in sync with the city’s rhythm.

Day 2 — Domberg, the cathedral, and a “high” view of Bamberg

  • 🚶 In the morning, climb up to Bamberg Cathedral (Domplatz): stone, cool air, and the spacious square set the city’s scale. Stop by the Diocesan Museum (Domplatz 5)—stained glass, textiles, and treasures reveal the church layer of the old episcopal center. From here, head down to Sandstraße: calm by day, lively in the evening. For lunch, the classic choice is Schlenkerla (Franconian Schäuferla pairs wonderfully with Rauchbier). Spend the afternoon hour at a café and with a view over the Regnitz: the city is best absorbed “through air and water.”

Day 3 — Stephansberg: cellar taverns, viewpoints, and “summer Bamberg”

  • 🌳 Stephansberg is a hill of beer cellars and chestnut trees. Walk up in 15–20 minutes (a moderate incline) to Spezial-Keller (Sternwartstraße 8): the panorama of the cathedral, Michelsberg, and the roofs of the Inselstadt looks like a postcard, but in person it’s more contrasty—glass and terracotta. The classic order: a light Brotzeit + a Lager from Spezial. If it’s in season (usually late April to September), walk another 10 minutes to Wilde Rose Keller (Oberer Stephansberg 49): an old garden under the trees, a playground, and on weekends a family atmosphere. Allow 25–30 minutes for the descent and the way back: the evening rays here are especially kind to brick and sandstone.

Day 4 — The “beer axis” of Obere Königstraße: Spezial ↔ Fässla

  • 🍺 Spend the morning on a pair of historic brewery inns facing each other: Brauerei Spezial (Obere Königstraße 10) and Brauerei Fässla (Obere Königstraße 19–21). At “Spezi,” try Rauch-Lager or Ungespundetes; at Fässla—Zwergla and Hell(es). Between tastings: a skyline of gables and signs, a rare 21st-century “living” craft front. Allow 3–4 hours total with a lunch break. In the afternoon, head back to the hotel and let your palate rest: the second round in the evening will be more rewarding.

Day 5 — Wunderburg: Keesmann and Mahrs Bräu “door to door”

  • 🏘️ The Wunderburg district is cozy streets and two legends at once: Keesmann (Wunderburg 5) with crisp Herren Pils, and Mahrs Bräu (Wunderburg 10) with soft “a U” (Ungespundetes). Come during the day: 10–12 minutes by bus from the center or 25–30 minutes on foot through unhurried neighborhoods. The ideal setup is lunch at one, dessert and another chanson of flavor at the other; between them, a short walk to “reset” your receptors.

Day 6 — Franconian Brewery Museum: how Rauchbier is born

  • 🏛️ In the cellars of a former monastery brewery on Michelsberg (Michelsberg 10f), the brewing museum shows what malt is, how it was dried over beechwood smoke, and why “smoked” isn’t a gimmick but an ancient technology. Take your time: 1.5–2 hours for the exhibition + Michelsberg’s viewing balconies. In the second half of the day, take an easy walk around Domberg or have a cup of coffee in the courtyards of the New Residence.

Day 7 — Hain Park and life by the water

  • 🌿 Hain Park (Theresienhain/Luisenhain) is a green corridor along the Regnitz. In the morning, have a picnic, rent bikes by the riverside (or just walk the shady alleys). For lunch—an unhurried retreat at Brauerei Greifenklau (Laurenziplatz 20) at the foot of Altenburg: solid food, their own beer, and an intimate courtyard. Evening is for the embankments: golden hour beautifully “glues together” the park and old stone.

Day 8 — A walking climb to Altenburg and an evening at a Keller

  • 🏰 Climb up to Altenburg Castle (Altenburg 1): the walk takes ~30–40 minutes from the center (uphill, but not extreme). From the platform there’s a круговая panorama of Franconia. On the way down, it makes sense to return via Stephansberg and end the day at Spezial-Keller: sunset in Bamberg is always about a “slow frame.”

Day 9 — ERBA Park and Bamberg’s “islands”

  • 🏞️ The north of the Inselstadt is ERBA Park on the site of a former textile manufactory: water drops, meadows, modern public spaces. Walk to the fish ladder, the children’s play town, and the campus library. In good weather, it’s a “day to breathe”: fewer museums, more water and grass. On the way back—coffee on the embankment and sunset at Obere Brücke.

Day 10 — The gardeners’ town: the Gärtner- und Häckermuseum and the Gärtnerstadt quarters

  • 🥕 Bamberg is not only beer, but also a special tradition of urban market gardening. At the Gärtner- und Häckermuseum (Mittelstraße 34), step into a house-garden and learn how the city’s “edible culture” took shape. Then head into the Gärtnerstadt quarters: low houses, garden beds, and workshops. By evening you can return to the center and do a “small beer loop” of your favorite addresses.

Day 11 — E.T.A. Hoffmann and Natural History: a day without hops

  • 📚 If you want a break from beer, put together a “quiet” cultural day: the E.T.A. Hoffmann House (Schillerplatz 26) with a Romantic-era atmosphere, then the Natural History Museum (Fleischstraße 2) with the historic Bird Hall. For lunch—light food in the center. In the evening—a Keller or a glass of wine: Bamberg balances well.

Day 12 — Beer shopping and “a taste of Franconia to take with you”

  • 🛒 During the day, stop by shops and Getränkemarkt beverage stores: bottled Rauchbier from Schlenkerla and Spezial, a pils from Keesmann, seasonal brews from Fässla. Get sturdy cardboard six-packs, keep them upright. Lunch — something local (Bamberger Zwiebel is a great companion to smoked beer). In the evening — a final visit to your favorite brewery pub.

Day 13 — A free rhythm: repeat the best

  • 🔁 This day is a buffer: go back to a favorite area (Stephansberg/Wunderburg/Old Town), pick up more views, do a long riverside walk, sit “under the chestnut tree” without a plan. In Bamberg, repeating is a way to discover something new.

Day 14 — A farewell loop and a view of the water

  • 🌇 The finale is a short loop: Obere Brücke → Town Hall → Leinritt → your favorite keller. For dinner — a calm restaurant with local cuisine. Write down the flavors you want to take with you: beechwood smoke, malty caramel, the salt of old stone by the water.
